We expect a lot of traffic coming into this place,” Beihn said.

When guests enter the Casino, they will notice a lot of things that have been influenced, and decided by the Mono Indian Tribe.

“A lot of the design and features come from our culture up in the mountains,” Beihn said. “Our tribal council and past tribal leaders have been involved in what they wanted to see in the casino.”

Beihn has been around the project since he was on the Council almost eight years ago. His father and family have also been on the Council, and were a part of the Casino project.

There is still a Phase 2, but when that will start is undetermined, according to Beihn. The second phase will include a parking garage and a hotel.

Because of the 20-year wait to open the Casino, Ward said it gave them an opportunity to find out what guests wanted from a casino.

“We had a few unexpected delays, but with that came some opportunities,” Ward said. “One, it allowed us to spend more time in the market and talk to more potential guests about what the casino should offer. When we built the property, we were able to take all of that into mind, and design a facility that is guest-centric. Some of the architectural things are unique like the floor-to-ceiling glass walls on the north and south side of the buildings. You also see a lot of light colors. We put in a nice high limit area that wasn’t even contemplated on the original design. A lot of that came as a result of having a little more time to work on it. When we open the doors, the guests will say, ‘Wow, it really is worth the wait.’ It really is a place we built for them. We’re excited about it.”

In addition to the largest casino floor in the market, North Fork Mono Casino will feature two full-service restaurants — Clubhouse 99 and Manzanita Steakhouse.

“We have the casual lunch and dinner in the Clubhouse 99 restaurant,” Ward said. “We like the idea of having a sports theme in there. The card dealers will have between 16-20 weeks of training when opening day hits.

“We did extensive training for everybody,” Ward said. “Everyone that comes on, regardless of position, goes through a minimum of three weeks of training. Our job is to show them how to be successful.”

North Fork Mono Casino features 2,400 slot machines, 40 table games and four bars.

“We have the advantage of being the largest casino in the market,” Ward said. “We have a large variety of games. However, the Wildcats scored five straight points with three kill and two aces.

After a Torres missed serve, Sunnyside scored two more points for an 11-8 lead.

The Toros cut the lead down to one after a Hamman kill. Sunnyside came back with three straight points for a 17-12 lead.

Specials put down a side out kill and Anderson had a solo block to cut the lead to three. So, what’s new? They are moving to Fresno!

Writing for Newsbreak, Liliana Fannin reports, “Fresno is the second most common destination for Gen Zers (born 1997-2012) moving from Los Angeles and the fourth most common location for those moving from Riverside, according to a report from U-Haul published in July.” She says that the Los Angeles Times even posed an intriguing question in its story about the phenomenon: “Is Fresno the new L.A.?”

The Business Journal notes that the new migration is especially interesting because “the city did not appear among the five leading destinations for baby boomers, Gen X, or millennials leaving Los Angeles or Riverside in the data reported by U-Haul.” But for Gen Z customers leaving Los Angeles, the five leading metropolitan areas were San Francisco Bay Area, Fresno, Bakersfield, Houston, and Dallas. And for those leaving Riverside, the chosen areas were Los Angeles, San Francisco Bay Area, Phoenix, Fresno, and Dallas.

Frankly, to me the biggest surprise in the new data is the inclusion of the San Francisco Bay Area for both migrating groups. Other sources opine that the SF Bay Area is one of the “best places” to live. But that’s only if you can afford to pay $4,000 or more for a one-bedroom apartment in S.F. And the median price of a house is $1,595,000. If you decide to settle further south on the peninsula, say to Palo Alto, the median price for a house is $3,600,500. But, if the migrants are willing to go as far south as San Jose, they’ll find that the median price for a house is $1,346,167.

In addition, nearly everything else is more expensive than elsewhere throughout most of the U.S. However, for reasons that were not explained in any of the sources that I consulted, the cost of a gallon of gasoline is actually cheaper in S.F. (average $5.63) than it is in Fresno (average $6.35). And that’s also true for migrants from Riverside where the price of gas is $6.21 for regular, $6.46 for midgrade, and $6.64 for premium.

Why Fresno?

Fannin reports that Mayor Jerry Dyer elaborated on the influx of people. She states that Dyer notes “the city’s affordable living, limited traffic congestion, and central location near natural parks.” In Fresno, the median cost of a house is about $400,000, a one-bedroom apartment goes for about $1,300/month, and the average across all types of apartments is about $1,600.

Fresno also offers a sunny climate with mild winters. The Chamber of Commerce might advertise “warm summers,” but we know that summers are hot, however we soften that proclamation by adding “…but it’s a dry heat.” The city is also close to three national parks: Yosemite, Sequoia, and Kings Canyon. So, residents can avail themselves of opportunities like hiking, cycling, weekend trips to the mountains, and proximity to Casino/Resorts.

Fresno offers excellent opportunities for higher education with a two-year college that has multiple campuses as well as California State University, Fresno. The city also has an active art community, a wonderful zoo, and The Great Fresno Fair.

Fannin points out, “To be sure, downtown has struggled with stalled projects and vacant properties….” However, Kelly Gibson, a residential manager with Manco Abbott says that there has been “an influx of new businesses, housing, events, and nightlife downtown in recent years” and that they’ve drawn local residents to live in the area. According to Gibson, “Downtown is becoming an increasingly appealing place to call home, bringing a renewed sense of energy and excitement to the city center.”

¿Por qué no Madera?

Madera is located at the geographical center of California, part of the Fresno-Madera Metropolitan Area. The City of Madera has many of the same advantages as Fresno, although we lack the shopping and business centers. We also have a two-year college and easy access to CSU Fresno.

The median price of a house is about the same, $385,000, and a one-bedroom apartment goes for as low as $995/month and a high-end apartment with premium features goes for $1,500 to $1,600/month. At the present time, our downtown area is going through some well-needed changes. Caltrans is redesigning Yosemite Avenue (which is part of State Route 145). When the project is completed, it will feature new sidewalks and traffic circles.

Most of all, I think that the City of Madera offers the friendliness that seems to be more likely found in small cities than in larger agglomerations. That’s why, when it came time for me to retire, I chose Madera.

A few miles north on SR 99, there’s the Discovery Center, which features the relics of creatures that lived in the area during the paleolithic era: mammoths, dire wolves, saber-tooth cats, as so forth. Because Madera means wood or lumber in Spanish, I always thought that we should have a Lumber Museum. Mariposa has a gem and rock museum, which fits well with its mining history. We have an empty library building where we could display various types of wood that can be found in California (and maybe elsewhere, as well).

We also have the Chukchansi Resort and Casino on SR 145 and the North Fork Mono Casino and Resort just off SR 99 and Road 17 which is scheduled to open on Wednesday. Each features multiple restaurants and a variety of gambling choices. They also provide employment for many local workers.

A quarter century ago, Gail McIntyre, Debi Bray, the late Nancy Clute, and I organized CPR (Community Pride Renaissance) which led to other committees and eventually produced the Madera 2025 Action Plan. I think we need some similar organization now to plan for the modernization of downtown once the new street is completed.

Like Fresno, Madera can be a destination.

• • •

Jim Glynn es Profesor Emérito de Sociología. I call it that, too, but depending on the circumstances, I try to remember that most people call it basil. I sometimes have reverted back to the Italian version, and have been met with looks that translate into, “Huh? What?”

I have about a dozen plants in pots on my deck, along with other herbs such as rosemary, thyme, garlic chives, regular chives, thyme, oregano, sage and parsley. Every summer I make pesto sauce, to enjoy as a pizza topping or with pasta. I also use a bit to flavor homemade vegetable soup or even spread on a piece of toast.

Years ago, pesto sauce was not very popular, and some of my co-workers would look on in disgust when I ate pasta mixed with this green sauce. I heard everything from it looked like a cow coughed on my pasta, to jokes about me making a meal from having cleaned off lawnmower blades. I was happy when this delicious sauce made from basil leaves became highly prized.

If you also like basil, I hope you find some inspiration in the following recipes. Happy eating to all.

Basic pesto sauce

I have used walnuts when I didn’t have pine nuts and it works just great. Also, I like to cook the pesto sauce (without the grated cheese) for just a minute, to help blend the flavors and mellow the garlic a bit.

2 cups packed fresh basil leaves

2 cloves garlic (I would need a lot more than that)

1/4 cup pine nuts

2/3 cup extra-virgin olive oil, divided

Sal kosher y pimienta negra recién molida, al gusto

1/2 cup freshly grated Pecorino cheese (or Parmesan)

1. In a food processor, combine basil leaves, garlic and pine nuts. Process until coarsely chopped. Add 1/2 cup of the olive oil and process until mixture becomes smooth. Season with salt and pepper.

2. If using right away, add the remaining olive oil and process again. Pour out into a serving bowl and mix in the grated cheese. If you want to freeze the sauce, transfer to an airtight container and drizzle the remaining oil over the top rather than mixing it in. Freeze for up to three months. When ready to use, thaw and mix in the cheese. Makes about 1 cup.

Asadillos de caprese

24 cherry or grape tomatoes

12 cherry-size fresh mozzarella balls

24 fresh basil leaves

Balsamic glaze

Sea salt

1. You can buy this, or make your own by simmering the vinegar until it reduces to a syrup.

3. Sprinkle lightly with salt and serve at once. Makes 12 servings.

Creamy basil chicken

4 5-to-7-oz. boneless, skinless chicken breasts, pounded evenly to about 1 inch

1 cucharadita de sal kosher

1 teaspoon cracked black pepper

1 teaspoon dried basil

2 cucharadas de aceite de oliva

2 tablespoons butter, divided

1 medium shallot, minced

3 dientes de ajo picados

4 ounces sun-dried tomatoes, thinly sliced

1/2 cup dry white wine

1/2 cup chicken broth

1/2 cup heavy cream

1 ounce (about 1/2 cup finely grated) Parmesan cheese

1 cup loosely-packed basil leaves, julienned, plus more for garnish

Chopped parsley, to taste

1. Transfer chicken to a plate and tent with foil to keep warm.

3. Reduce heat to medium. Add the butter and heat until it melts and foams. Add shallot and saute, stirring frequently, until soft, about 3 to 4 minutes. Add garlic and sun-dried tomatoes, stir together with shallots, and cook 1 minute more.

4. Add white wine to deglaze the pan, scraping any browned bits from the pan bottom, then add the chicken broth. Add the Parmesan cheese, a few tablespoons at a time, whisking in between until the sauce is smooth. Stir in the fresh basil leaves.

6. Return chicken to the pan and simmer in the sauce until cooked through, about 5 to 7 minutes. Spoon sauce over the chicken and garnish with more fresh basil and the parsley. Folks around Madera called it the homeliest hound that ever profaned civilization but readily acknowledged it as a champion fighter. Everywhere Ben went he puffed up with pride at the respect that was accorded his pet pup. Then one day the courageous cur and its pugnacious master were both brought down a peg or two. They were chased out of town by an irate little woman who hadn’t heard how tough they both were.

Bresee worked on the Adobe Ranch and came into Madera one day in the summer of 1909 to do a little business. He had a couple of horses he wanted to sell, so he set up shop on the corner of D Street and Yosemite Avenue, just down from the Palace Hotel.

Now as badly as Ben wanted to sell his horses, he wasn’t nearly so proud of his steeds as he was the dog that helped corral them. His pet bulldog kept the animals from wandering away while Ben was negotiating. They made a good pair — the man and the dog — and Ben figured they could withstand just about anything together.

Then along about noon, a country-bred canine accompanied by a lady in a buggy came breezing down Yosemite Avenue. The lady parked her rig on the north side of Yosemite Avenue, intending to do a little shopping at Tighe and Breyfogle’s. Before she could enter the store, however, her dog spotted Ben’s four footed companion, whose hair bristled on the back of his neck at the thought of an invasion of his territory there in downtown Madera by another pooch. For his part Ben just leaned back against the street post. He was sure he was about to be entertained.

In less time than it takes to tell it, the two dogs were at each other, and the ruckus drew a crowd, including a reporter from the Madera Mercury, who commented that if the spectators had had any advance notice of the combat there would no doubt have been a side bet or two. The smart money would have been placed on Ben Bresee’s bulldog.

With Ben nonchalantly looking on with confidence and the little lady calling her dog, the fur began to fly, and in less than a minute, Ben’s bulldog had its opponent on the ground howling for mercy.

Bresee, convinced that his dog had proved its worth, moved to defuse the situation by separating the two snarling adversaries. He yanked his dog and attempted to pull him away, but the bull held fast. Then he grabbed him by the hindlegs and tried to pull him away. Still the dog held on to its opponent. Finally he seized his dog’s jaws and endeavored to unlock them, all to no avail. Suddenly it dawned on everyone that this was going to most likely be a fight to the finish. They reckoned, however, without the courage of the little lady.

While Ben was thus occupied, he didn’t see the driver of the buggy step quickly back to her vehicle. He didn’t notice the country dog’s owner retrieve that umbrella with its sharp, pointed end. He didn’t see her advancing on the fracas until she was almost on top of him with what was almost a lethal weapon in her hands. There was determination in the woman’s eyes. If Ben couldn’t stop the fight, she could — in her own way.

The unidentified woman ignored the dog fight and directed her righteous indignation on Ben. Raining a series of well-aimed blows to his head with her umbrella, she drove her adversary to the sidewalk and then returned to the street to put a stop to the dogfight.

The last thing any one saw of Ben, he was running north on D Street with his dog right behind. Apparently when he deserted the fighting field, his four-footed gladiator decided to follow suit, and they didn’t return for the horses until the woman and her dog finished their business and headed back up Yosemite Avenue whence they had come. As the newsman reported later, trying to stop a dogfight was one thing; disarming a wrathful woman was quite another matter.

Ben Bresee thought that he had the meanest dog in town.
